My ground beef gets many hats...

- Taco Bell taco seasoning (mix 2lbs beef to one pkg to make your

serving larger with only 3 carbs - add enough water to simmer the beef

in the seasonings for a little bit) serve over lettuce with sour cream.

- Fresh cilantro, a little garlic, salt, pepper, oregano and mix into

meat balls. Flash freeze so they keep their shape when cooked. You can

also add some sugar free speghetti sauce to it after cooked and let

simmer. The flavors from the sauce lock into the meatballs and are

yummy. Serve with veggies or salad.

- patties cooked and then spread " tiger sauce " on them. I think its 1

carb per teaspoon but its sweet and sassy.

- patties cooked served on a bed of lettuce, topped with a slice of

tomato, some bacon, cheese and mayo.

- patties cooked served with grilled onion, mushroom and green pepper

(small amounts but enough to flavor it)

- meatballs made from 1lb hot sausage (0 carb) and 2lbs ground beef. Mix

well, patty and cook up a few days worth as needed.

- mock pizza made from ground beef, mozzerella, pepperoni, black olives,

a small amount of sugar free sauce. You could also use big mushrooms and

break off the stems- brush with butter and broil a little bit. Spoon the

toppings on and use mushroom as a crust. Put back in the oven until its

all melted together.

- tacos made from cheese crackers bent into a taco shape, ground beef

(seasoned or not), lettuce, small amount of tomato and sauce.

- patty with a small amount of steak sauce on it. (count the carbs and

make sure there is room)

- brown ground beef (crumbled) with a little bit of onion. Add in lots

of shredded cabbage and put the lid on it to allow it to cook down.

Season with salt and pepper. This is simply bierocks filling but you eat

it plain. Its good :-) Ate this before low carb...

- mock chicken fried steak (I don't do this because I don't do pork

rinds)... take ground beef patties and dip in a beaten egg and then roll

in pork rinds. Fry until cooked through and golden brown.

- meatloaf made with onion, mushrooms, cheese, garlic and egg. You could

use the soft rolls ground up in a food processor for the bread crumbs.

- lasagne made without the noodles. Instead, try thin strips of zucchini

where you would normally have the noodles. Use a sugar free sauce, the

ricotta mixed with egg and try throwing a bit of cilantro in for good

measure. Count all the carbs for all the ingredients you put in and then

cut into equal portions and freeze individually. You know how many carbs

per piece and if you got room in your count, you can have some :-)

- patty breaded with egg and a ground up soft roll. Fry until cooked and

golden brown. Take heated sugar free speghetti sauce and pour some on

top and then top with a thin slice of provalone cheese so that it melts

from the heat of the sauce and patty.

- season with Indian spices and roll into logs and fry.

- season with taco seasoning and roll into a low carb tortilla (I have a

recipe) and stuff with lettuce, cheese and sour cream

- use your dehydrator and make beef jerkey (kits sold at walmart to make

it with ground beef)

- Cabbage Casserole German Style

2 pounds grounded beef

3 Tbsp. onion

2 pounds cabbage or green cabbage

1/2 cup water

2 Tbsp. Vinegar

Sweetener to substitute 2 Tbsp. sugar

1/2 pound butter

Some thickener, if needed

Pepper, salt oil

Fry the onion in oil and add the grounded beef. Bread, until the beef is

crumbly. Add some pepper and salt. Set aside. Chop the cabbage and put

in a big pot with water, vinegar and sweetener. Bring to a boil, put the

butter on the top of the cabbage and cover with a lid. Cook, until the

cabbage is ready. Add the beef and stir. Add vinegar, sweetener, pepper

and salt to taste. If needed, add some thickener or some cream. Makes 6

servings at 7 carbs per serving.

-Chili Relleno Casserole

1.5 pounds ground beef

1 can (7 oz) whole green chilies, drained and split lengthwise

4 oz jack cheese (or cheddar) shredded

6 eggs, slightly beaten

1 tablespoon flour

1/2 cup cream

1/2 cup water

1/2 teaspoon garlic powder

1 teaspoon salt

1 teaspoon baking powder

In greased baking dish, layer split chilies, cooked ground beef and 1/2

jack cheese. In bowl combine eggs, flour, cream, water, garlic, salt,

baking powder, mix well and pour over chilies. Top with cheddar cheese

(or jack). Bake at 350 until puffed and brown. Makes 6 servings, 6.1

carbs per serving.

Is this soft roll a legal item? If not, what are they meaning by soft roll?
