Yes - peel, slice and LIGHTLY coat the eggplant with olive oil and

put in a 400 F. oven for 10 minutes. Season as you will. Try an

Eggplant Parmesan, just keep it SBD friendly and easy on the cheese.

Sometimes I leave the peel on and slice it, brush with olive oil and

generously sprinkle italian seasoning and bake it. You could put

parm. cheese on it too.

I really enjoy roasting eggplant with red peppers and red onions. I

just slice eggplant (no need to peel - just cut in half lenghtwise

and then slice), red peppers and red onions and put them on a baking

pan and drizzle olive oil on them and mix them up really good and

bake at 400 for about 25 mins. The veggies will take on a brown

color and be soft when done. I would stir them once or twice while

roasting. This also works great on the grill if you have a roasting

pan for the grill.
