The short answer is " it depends. " You absolutely should not eat the stem. It's just nasty. The purple skin can be bitter, especially on larger eggplants. The skin may be more palatable on the smaller Japanese eggplant. There's really no pit. The seeds are more like cucumber or banana seeds -- perfectly edible. I especially like eggplant now that I can fry it again. And, it's a carb bargain! Hope this helps.
