Congrats on a great start! Never fear, eggplant is in my family history

(mama was Italian). The short answer is " it depends. " You absolutely should

not eat the stem. It's just nasty. The purple skin can be bitter,

especially on larger eggplants. The skin may be more palatable on the

smaller Japanese eggplant. There's really no pit. The seeds are more like

cucumber or banana seeds -- perfectly edible.

I especially like eggplant now that I can fry it again. And, it's a carb

bargain!

Hope this helps.

Anyway I am looking through the recipes and have a silly question. I

want to try the eggplant. This is a food I have missed in my upbringing.

Do you peel the purple skin or eat it? Do you core it or eat what is in

the core? Thanks for your help. >>
