Guest guest Posted August 17, 2002 Report Share Posted August 17, 2002 Hi Jim, Do you eat eggs? Tofu is good as well, great in a stir fry with veggies. I have done a little reading on vegetarian low carbing (there are some sites out there). I would suggest advoid higher carb veggies like carrots, potatoes, corn, peas, turnip, ect. Jim... not sure about tofu, but I don't think it's too high in carbs -- anyone know?? -- but I'd include lots of the low carb veggies, like spinach, broccoli, cauliflower, peppers, green beans, asparagus, etc. :-) A fruit I'd include would be avocados, and I'd include nuts. Guest guest Posted August 17, 2002 Report Share Posted August 17, 2002 Hi, Jim...my daughter is a vegetarian, has been for years, and lives in a vegetarian community. Whenever I visit her I have to be Very Careful because most veggie diets are pretty high in grains and carbs. Luckily, I do insulin so I deal with it by watching portion size and adding more insulin than usual. This works for me. If you're not able to get your BGs down to where they should be (to avoid future complications get an A1C 6 or below) on a vegetarian diet because of the need for high carb in grains you might consider insulin. This is my standard list of veggies that have very few carbs: spinach cauliflower broccoli summer squash (zucchini, crookneck) spaghetti squash mushrooms asparagus greenbeans cabbage sauerkraut bok choy... and of course lettuce and avocados, which aren't a veggie but a fruit...but are pretty lowcarb. I only eat about a third of an avocado at a time... I believe there's an online lowcarb vegetarian website. I'll see if I can find it...yes, here it is. You'll find it very useful.
