Ok, I forgot to ask, How much cream cheese?? 4 Oz, 8 oz.??

I love mashed cauliflower in place of mashed potatoes. I steam it, then

drain very well, over the hot pan so it dries out some, then I add cream

cheese and some butter. If it's still alittle wet, I bake it in the

oven, sometimes with cheese over it. Good stuff.

Amount Measure Ingredient -- Preparation Method

1 pound ground beef

1 small onion -- chopped (about 1 cup)

1 clove garlic -- finely chopped

1 medium eggplant (about 12 ounces) -- cut into 1/2-inch

cubes (about 3 cups)

2 teaspoons Italian seasoning

1/2 teaspoon salt

1/4 teaspoon pepper

2 tablespoons water

4 cups cauliflower, frozen -- boil, mash add better and

cream while mashing

1 tablespoon butter

2 tablespoons heavy cream

Heat oven to 350º. Spray rectangular baking dish, 13 × 9 × 2 inches, with

nonstick cooking spray. Cook ground beef, onion and garlic in 12-inch

nonstick skillet over medium heat, stirring occasionally, until beef is brown

and onion is tender; drain. Stir in remaining ingredients except Cauliflower,

Heat to boiling; reduce heat. Simmer uncovered 15 minutes, stirring

occasionally.

Boil frozen Cauliflower until cooked. Put in a food processor and mix with

butter, add cream slowly while mixing. Add what ever spices you like to this

include salt and paper

Spoon beef mixture into baking dish. Spoon Cauliflower evenly over beef

mixture; spread to edges of dish. Bake uncovered about 30 minutes or until

heated through. Let stand 5 minutes before serving.

Hi All!

I tried the Hearty Shepherd's Pie tonight and it was a big sucess!!! My kids

and hubby had no idea they were not eating potatoes!! LOL!! Also the picky

eaters that they are, they had no idea Eggplant was in it either!! LOL!! I

added 6 oz. of cream cheese to the cauliflower, and 4 oz.would have been

enough. I think that ups the carb count to 8 grams. I am not good at that

stuff so I will leave it to someone to let me know, please!! I sprinkled some

paprika on top. It was yummy and pretty filling with a nice salad.
