I ate butternut squash and it agreed with me!!

Couldn't find it in the market again :(

Not the season right now.

Is spaghetti Squash considered advanced?

i think that's the one someone had me try way back - not a squash fan

here but it did agree with me

Yeah! Congratulations!

Butternut is a winter squash, so we probably won't be seeing it on the

market for a couple months yet -- it usually arrives around the same time

as the pumpkins, and, in fact, can be substituted for pumpkin in many

recipes. I buy and bake them in batches, scoop, and mash the flesh with

some butter and then freeze it in meal-size boxes. Then all I have to do

is grab and defrost. Makes a great substitute for sweet potatoes,

too.

Elaine cautioned that spaghetti squash is pretty fibrous and could be a

problem for some people.

For myself, it's still a bit of a problem vegetable. Or was, the last

time I tried some, back in, I think January. I like the taste of zucchini

better and they're almost always available. But I'll give it another go

the next time I see one. I'm always game for expanding my cooked

vegetable repertoire.

-thanks - my knives do stink - so old and i'm weak - maybe hubby

could help - thanks - is ghee easier to digest then butter if i want

to try mashing and adding it??

If you don't mind using your microwave, I find that's the easiest thing to do. Wash your spaghetti squash and pierce it once or twice with a knife so it doesn't explode. My sp. squashes come w. a sticker suggesting 5-6 minutes of microwaving per pound. I cook for a family of six, so I usually buy one very large one or two mediums. They take between 12-16 mins to cook usually. I check and don't stop cooking them until I can insert a knife easily

Then I take them from the microwave and put a big slit in so that they can cool down while I make the rest of our meal. Once they're cool, you can de-seed them (I roast our seeds in the toaster) and use a fork to pull the sp. squash strands out.

Eileen,

Squash tastes so much better in season which is the winter it has a

very sweet and satiating flavor!! Be sure to give it a try in a

couple of months. I really think you'll love it!
