I have made kombucha with honey - it does work, although it's a bit less fizzy. (As a nutrition consultant), I've been wanted to study kombucha for it's "sugar structure" for a while. I'd like to think that the sugar gets fermented out, although I don't know if it's 100% converted, which is why I make it with honey (to play it safe). However, it would be much easier if sugar could be used (because it turns out better and the culture is more hearty with sugar). I'd love to hear others experience with this over time so I can share it with others. sCertified Nutrition Consultantjulie@...HealthfulLiving.orgNourishingHope.com>Has anyone heard of this drink? I saw it in my >market yesterday and found this site today >discribing it's benefits. It is a fermented>grink started with suger but I'm sure it could >be started with honey. Any drinkers? Marilyn?
