(As a nutrition consultant), I've been wanted to study kombucha for it's "sugar structure" for a while. I'd like to think that the sugar gets fermented out, although I don't know if it's 100% converted, which is why I make it with honey (to play it safe). However, it would be much easier if sugar could be used (because it turns out better and the culture is more hearty with sugar).
