That's a highly individual thing. I chose not to start nut flour for

around 4 months (well, after an abortive effort at 2 months) and didn't

have problems with it.

It's legal. However if you are celiac and/or MCS, according to

people previously on the list who had those diagnoses,

you might react to it. Other people are just fine with it.

For new people, please include your name, and if you are

asking for info, your diagnosis.

It can be kind of expensive at the store and it's a lot coarser. Almond flours from Digestive Wellness and Lucy's are very fine so easier to tolerate. It depends on how you look out it though. When I first started with almond flour, I got a jar of Almondie almond butter, one bag of almond flour and some jam from Digestive Wellness to see how I tolerated it. If you do ok with the butter or flour, you can check into bulk buying from any of the recommended places. Houghson (sp?) is one place, Lucy's is probably the most popular and Digestive Wellness.

It freezes well and lasts a long time if frozen.

Good luck,

The skin on the almonds is very difficult to digest, so blanching them

and removing it makes both the almonds and the almond flour from them

more digestible.

Hi Suzanne,Yes, I certainly have. More specifically, I have found it no problem some days and very problematic others. Interestingly, it has most specifically been an issue as pizza dough. I used the recipe from BTVC p 111. I love the taste, but the flour sits like a rock in my tummy.I took almond flour out of our diets when we started from intro again recently, and when I tried to reintroduce it several weeks in, I was repelled by even the taste.I, too, am looking for a good (and hopefully no more expensive) alternative.BadenHas anyone had a hard time digesting things made with almond flour? __

Hi Suzanne,

I'm 6 months into the diet and still don't tolerate nut flours or nut butters. I did eat some chopped walnuts toasted in butter with raisins and honey recently and luckily had no reactions to it. That is one of my fave SCD desserts... that or heating a couple TBS of nut butter and mixing it with shredded coconut and honey, but alas I can't tolerate that either. Both of those were things I ate before I started the intro diet and have missed them terribly these last 5 months.

Well coconut is very advanced. I'm not 100% okay with it yet and I'm 13+ months

in.

Have you tried macadamia butter or cashew/macadamia?

I used cashew butter and cashew flour - made in my cuisinart from raw

nuts pretty early on and had no problem with them.

I'm mentioning cashew because I remembering reading that Esther

Weiss, I believe, of Digestive Wellness had a sensitivity to almond

flour she didn't discover to a ways into the diet. Which is why their

SCD bakery to this day offers everything but almond flour.

Or if you are okay with walnuts, try making walnut butter or walnut

flour. And see if that works.

Or maybe try pecan again to see if you have gotten anywhere. ???

Yes, I have great difficulties digesting things made with almond

flour. Aggravates my entire digestive tract.

I not eat more than one piece or item made with nut flours per day;

less often if my upper GI symptoms are flaring. Also I never use 100%

almond flour in a recipe. I generally use 40% to 50% almond flour,

and a mix of other nut flours, usually pecan or walnut.

By the way, I don't tolerate nut butters either. But I do fine with a

bit of peanut butter.. This is opposite to the experiences most

people have on SCD, so just proves you always have to test and

experiment.

Hi Suzanne,

I'm 6 months into the diet and I cannot tolerate baked goodies made

with 100% almond flour. I use 50-50 almond flour and cashew flour

instead and limit myself to one muffin (or equivalent) per day. That

seems to work for me. I haven't tried to make " bread " with this

combination but it works for muffins, etc.

See....there really is something to this if we all have similar reactions. I guess I will try cashew butter bread. Definitely no more pizza dough! I did make the carrot bread and it was ok just could not eat a large pc of each just small slice.

Thanks

Hi Suzanne,I wonder if it's the enzymes in whole raw almonds that allow us to digest those more easily than the flour, which may be from blanched almonds, or just exposed enough in the grinding, packaging and storing process to have too many enzymes killed by the time we get it. When I intro nuts again, I'm going to be soaking them for that reason. I made a very yummy cashew-butter loaf recently, adapted from the one submitted by to pecanbread.com It was more like a plain cake than bread, but really nice and sliced well. Alas, my son reacted to the eggs and we haven't been able to have it since! Below, in case it is

helpful to you.Baden*Into a glass loaf pan, put:1 cup cashew butter1/2 tsp baking soda3 eggs1/2 cup cooked and pureed orange

(acorn, butternut, pumpkin, etc) squash[Grated ginger would be a great addition.]Puree.Bake at 350 degrees for 25-30 minutes.

(Leave it a bit moist.)RESULTS: Rose very high. Moist, very

fluffy loaf. Mild, plain. Slices well. Enjoyed with ghee.

Suzanne,

You know, I'm beginning, more and more, to think I was lucky I was too

sick from gall bladder surgery the first month I was SCD to consider

making breads and muffins, then too busy the second month to keep up with

anything except yogurt (I work part time retail, and my second SCD month

was CHRISTMAS!) I never got around to trying breads and muffins and

crackers until I'd been SCD for more than six months -- well except for

my first Christmas Feast, which had so many too-advanced foods that I

couldn't tell you whether it was almond flour or something else.

In any case, I never had heart-rendings about never having any bread

because I didn't have time to make it!

Do you tolerate lentils or and kind of legumes yet?

I'm on the diet with my husband. He has CD and I have no digestive issues. When I eat too much almond flour, I have that feeling of having a rock in my stomach too. My eating too much and y'alls eating too much is probably different....I can eat a lot more than one muffin but it's probably because the almond flour is so dense and heavy.

doesn't care much for almond flour baked goods. He doesn't like the texture so I have found desserts to make for him that don't have much almond flour in them. He loves pies and I'm always on the look out for new pie recipes. Our favorites are Lemon Meringue Pie (Grain-free Gourmet), Lemon Bars (http://uclbs.org/recipes/desserts/karinlemonsquare.php), Butternut Pecan Pie (http://nomorecrohns.com/Documents/ButternutPecanPie.pdf) and the Cheesecake recipe from BTVC.

For the Lemon Bars, I make the crust recipe as written and press into a 11x7 glass dish (I think those are the measurements, it's one size down from a 9x13) and double the filling part.

For bread for sandwiches and such, we like Souffle Bread (http://uclbs.org/recipes/bmc/soufflebread.php) and Basic Crepes (Grain-free Gourmet BL & D). I made the crepes for BLTs and tuna fish sandwiches for lunch this week. loved them. He's always loved sandwiches and he really, really liked the wraps.

Best wishes,
