Hi : I haven't found a legal ham. My mom used to raise hogs so I'm thinking of calling her old butcher to see if he knows anyone that sells ham that would be legal for SCD. However, ham cured with only salt is legal. Prosciutto (sp?) is legal. Sometimes around the holidays field has legal hams or you could check on-line.

Most commercial hams have dextrose or sugar or other illegals. And

I can tell you from experience that the results of eating some of the

commercial ham is Not Fun. (My husband's boss used to give a big 15 pound

ham at Christmas... I cooked it for Harry, and it smelled sooo good...

and... well, let's just say that no bite of ham is worth spending hours

in the bathroom....)

I haven't been able to find one in the store. I found a couple of local farmers that raise hogs that have them sometimes. A lot of the time they don't have the ones cured without sugar in stock. I haven't been able to grab one yet. I do buy a half hog at a time and I get fresh hams with it. The butcher that the farmer I buy from uses can't/won't/doesn't (whatever) do a ham cured without sugar. I still have to figure out how to cook them. I have 3 or 4 sitting in the freezer right now.

Those ham chunks can make a dynamite pulled pork -- put in crock pot, add

SCD-legal BBQ sauce, and cook the bejaysus out of them. Then shred,

remove bones, fat, etc. and serve the meat with extra BBQ sauce.

has directions for making your own ham (and you can sub honey for the

sugar -- I asked him), but he recommends doing it with unfrozen

meat.

Thanks, Marilyn!We haven't had pulled pork in a long time (pre-SCD). I would've never thought of making pulled pork from it.I checked out the link. It looks very doable. Have you ever done one? Do you use a cure powder? Thanks again,Kim

I checked out the link. It looks very doable. Have you ever done

one? Do you use a cure powder?

I haven't done one YET because I just found that link right around the

time I got the diagnosis, and everything went to Hades as I was preparing

for the cancer surgery.

A friend of mine in Milwaukee who is diabetic (and hence very careful

about sugar and starch) has used the Prague powders without difficulty.

The one drawback is that the Prague powders are nitrates and nitrites,

and some folks would rather steer clear of those, though I have not had a

problem with them.

Steer clear of Morton Tender Quick, which is in a lot of sausage recipes,

because it has a fair amount of dextrose in it. When I was working up a

couple of sausage recipes, I talked to a sausage specialist, who said

that you could simply substitute an equal amount of non-iodized salt for

the Tender Quick in sausage recipes, but I don't know how that would work

in the ham recipe. I'm not sure why it wouldn't, since there are hams

which are fully salt cured, but the ham might not retain its nice pink

color if you don't use the Prague powders.

I think I'm going to use a SMALL piece of pork, like the link suggests

for my first experiment, and see how it comes out before tackling a whole

big piece. Besides, I have to figure out where to refrigerate a whole ham

for however many weeks!
