Hi ,

I use sunflower oil for making mayo, about 1/4 tsp legal dijon mustard and

an additional egg or egg yolk to make it extra creamy. Depending on the

size of the egg I may add a wee bit more than the 1 tbsp of vinegar that

Elaines' recipe in BTVC calls for To finish it off I add honey to taste.

I was a big fan of mayo before the diet and this always comes out far above

any commercial mayos I ever had.

Good oils for mayo are: grapeseed, almond or walnut oil. They are

very mild and don't overpower the flavor of mayo like olive oil does.

Hi ,

I used extra light olive oil the first time I made mayo and it

tasted horrible. The next time I made it with sunflower oil and it

tasted fine. Take care, Becky in Chesapeake, VA with 10 yr old on

SCD 8+ weeks and still working on the constipation issue but may be

seeing a light at the end of the tunnel (and I'm not talking about

scoping either...tee-heee!)
