Or even just 1/3 the honey and some of the other? Doreen, You might be able to boil pears in water and then remove the pears and continue to simmer the pear flavored water down until you get something that is similar in texture to honey. That might work, but I don't think that pearsauce would work because it is too thick and the wrong texture to use in meringues.
