Elaine, I also like on's book. Do you use the Work flour mix? That's the one I've been using for about a year now and we love it. I substitute the white rice flour for Authentic foods fine brown rice flour for a little more flavor. I also recommend her book. It's wonderful. I bought one for each of my daughters for Christmas. I made banana bread from on's book Cooking Gluten-Free thisafternoon and it is the best banana bread I've ever had. My kids and Ilove it! It rose beautifully! (Mine has always sunk in the middle.) If you don't have Cooking Gluten-Free, I highly recommend it. She has awebsite: http://www.cookingglutenfree.com/flourmix.htmThat link takes you to her gluten free flour mixture, which I personallythink is the best there is. I make a triple batch and keep it in myrefrigerator and use it as I used to use regular flour. It's perfect! She also has a recipe for her pie crust on her website, which I use allthe time and can't tell a difference from a regular crust. It's easy too! I just looked at her website again and see that she has the page that hasthe banana bread recipe on her website also. It's under Recipes >

SampleBook Pages. It's a bit hard to read, but I think you can make it out. If you order one of her books, I'd recommend ordering one of the slightlydamaged copies. You save 15%. My "damaged" copy had one corner barelybent. My house still smells wonderful from that banana bread!Elaine in CO

Hi Shirley. Yes, it is Wark's flour mix that I love. It's great,

isn't it? You can get it premixed from Authentic Foods, so I sent two bags

to my mom's house before the holidays so she'd have flour to use when I'm

around. It worked perfectly! Even though that is more expensive, I didn't

want to buy six different flours and have her mix them.
