Guest guest
>>> If you use No-phenol enzyme to avoid a phenol reaction with the almond nut yogurt will it effect the probiotic in the yogurt??? Shouldn't. The interaction of concern between enzymes and probiotics is only for proteases which breakdown proteins. Bacteria, good and bad, consists of proteins so there is a concern that the enzymes would: - break down the probiotics - lessen their ability to adhere to the intestines and colonize I have looked at this several times in literature searches. It seems some bacteria are more sensitive to protease enzymes than other bacteria. And timing, pH, and other factors contribute to this. Other probiotics have totally unaffected by proteases. So it depends on the probiotic preparation and encapsulation. Of course, in terms of getting rid of bad bacteria, this interaction is seen as good. Proteases will help breakdown bad bacteria and help remove toxins so there is less die-off reactions. .
