"It's a tradition you'll find all over," explains owner Dick . Now has brought the Brazilian bread to Vermont. His product line continues to grow, from dry mixes, to bread sticks, to pizza products. The Portuguese name for the bread is pao de queijo, translation: cheese bread. And there's a lot of cheese in it, Cabot cheese to be exact. The milk used is Booth Brothers. Both are Vermont products. calls his bread a blend of two cultures. "We like to call it a Green Mountain samba." The secret ingredient is a special flour shipped 6,000 miles from Brazil. What really sets Chebe Breads apart from most is that there's no gluten in it. Chebe Bread caters to people who suffer from Celiac Disease, an intolerance for gluten. Chebe products are gluten-free because there's no grain in the flour. "We found our niche," says . "It's our market now." And the tasty treats appeal to other diners as well. And that's leading to big business. Orders for Chebe products are pouring in. "We're now a small shop. But we'll be a large company someday. I'm certain we can get there," says .
