I made it for my daughter, substituting pureed pears for the squash, and she eats them up. I made them smaller, like cookies, instead of muffins. She actually prefers them straight out of the freezer, then they have more firmness to them - go figure, kids are weird. We are only eating turkey and lamb. He's ok with lamb pancakes (egg and lamb blended), but I need some more ideas for the ground turkey. I've been making turkey burgers (which I think are delicious) (ground turkey, egg, pureed carrot, some nut flour, salt), and turkey balls (similar), but they are too " meaty " for him. He will eat them if he has to, but if anyone has any suggestions on something that would work with ground turkey, please let me know (we've tried cooked turkey in pancakes but the turkey is too chewy and I'd like something I can cook straight from the raw turkey). Then mix up 16 oz of ground turkey, an egg, zucchini that has been cooked, and half of the sauce. Shape into a loaf pan and cook at 350 for 45 minutes. Then add the other half of the sauce on top and cook an additional 15 minutes. Hope he likes it. I am wondering about the salicylates since it is now seeming to be a big issue with us.................I noticed that honey is on the very high list. What do you all do for a sweetener if your child cannot tolerate honey? Two things I forgot to mention are that we are easting small amounts of honey and pretty much unlimited cheese. We aren't eating tomatoes yet either, so the meatloaf is out. I loved it (I actually had it for dinner last night, then leftovers for breakfast and lunch!), but again, Sammy had a hard time with it. He liked the idea that it had cheese in it, but he couldn't taste that as much as the turkey. Anyway, I plan to work the " stuffing " from that recipe into a burger to see if he will be more willing to eat that than my former burgers.
