Yesterday I bought a cream chicken and wild rice to try out. Guest guest Posted December 20, 2004 Report Share Posted December 20, 2004 This is in the recipes section of this group: GF Cream Soup Base shared by Barb I use Bette Hagman's Creamed Soup Base recipe from The Gluten Free Gourmet Cooks Fast & Healthy as a basic starter recipe. Then I add parsley flakes or Mrs. Dash seasoning or celery seed as well as garlic powder for a bit more flavor depending on what soup I am making. 1 cup non instant milk powder 1 cup white rice flour 2 Tbs dried minced onion 1/2 tsp pepper 1/2 tsp salt Mix above ingredients and store in sealed jar. To save time, for all of these types of mixes as well as flour blends, I write the recipe for the blend on an index card and tape to the jar. For this one, I also write the recipes below on the card and tape it to the jar as well. It saves me much time in meal preparation. To make chicken soup, blend 3-4 Tbs dry base with 1/4 cup cold water and 1 tsp chix soup base (I use Herbox chicken boullion granules). Add 1 cup water and cook. 3 Tbs makes a thinner soup, 4 Tbs makes a thicker one. To make tomato soup, Add 1 cup tomato juice instead of the 1 cup water in the above chicken soup recipe. To make cream of mushroom soup, use liquid from a 4 oz can of mushrooms as part of the cup of water in the chicken soup recipe. Add mushrooms after the soup thickens. This works well for Cream of Asparagus and Cream of Celery soups as well. For Cream of Broccoli or Cream of Cauliflower, add cheese to taste after the soup is thickened. Making chicken soup stock is really easy. You can use chicken bones or chicken meat. For Chicken bones just put the bones in a pot of water and bring to a boil. Take a knob of ginger and crush it, take some green onion and throw it in the pot, crush a clove or 2 of garlic and throw it in. once the pot boils then reset the heat to the softest boil. when the tissue on the bones becomes soft filter out the solids, your soup is done add salt and sugar to taste. The best bones are the lower body bones. BTW you can make soup stock in the same way for anything. I have made and what is really good is that you can use the absolutely cheapest cuts of meat to make stock. Pig bones make excellent soup stock, pig knuckles etc. Beef bones make stock but beef has a strong flavor. I have even used to above to make fish head soup, (it requires the fish head to be from a 'clensed' fish, wild caught are often to gamey) You can use also chicken parts for making soup. However it is a bit of a waste. When the chicken meat starts to get soft to the touch you can remove the meat from the bone and throw the bones back into the pot. The meat, particularly dark meat is good for making other dishes that are ideal for recovering CD. The meat can be fried with other ingredients to make stewed chicken recipes Many stewed chicken recipes however add flour, so be careful. The softened stewed meat can be used with spagetti sauce, green 'tomatillo' sauce, I have used it to stuff tamales with, and many other dishes. One SouthWest recipe which is GF is to make stewed chicken Chalupas compuesta. This can be done by taking a corn tortilla and frying it. To this add a layer of GF refried black beans (salted and flavored to taste). On top of this you add your flavored stewed chicken meat (for example with some (garlic salt, olive oil, fresh cumin, picante sauce). Then salad greens, tomato, onions (not to much), avocado or quacamole. One can also make Tacos for lunch with the same recipe. Corn tortillas fried or heated. I haven't bought it in a few months, but I had several bowls this summer when we were first gf. Guest guest Posted December 21, 2004 Report Share Posted December 21, 2004 A couple of comments: The Progresso soup you are looking for is called " CREAMY MUSHROOM " not cream of mushroom. It is not condensed and an adjustment will need to be made to your liquid to use this in a casserole. Be careful when purchasing Progresso soups! They DO have an allergy statement at the bottom of their ingredients, but they do not consider wheat starch to be a problem. Always read the ingredients and not just the allergy statement! Lastly, this is very nice of your sister to do, but be sure she understands cross contamination issues. My SIL was great about making stuff I could eat at T'giving, but I had to explain to her about wooden spoons, teflon pans, etc. Also, when she opened her spice cabinet, the tops of the containers were all covered in a fine layer of flour because they were exposed when she had " flying flour " in her kitchen. Also, if she's handling gluten ingredients and your ingredients and is not diligent about handwashing, you could get contaminated. I don't mean to discourage you and I'm pretty easy-going about this kind of stuff, but I have learned the hard way that a little bit of gluten is still gluten.
