Guest guest Posted November 11, 2005 Report Share Posted November 11, 2005 Split pea soup 10 cups water 2 pounds lean smoked ham shank 2 1/4 cups split peas 1 1/2 cups chopped carrots 1 cup chopped celery 1 pkg dry onion soup mix (about 1 ounce) 2 bay leaves 1. Removed visible fat from ham and discard. In large saucepan combine water ham shank peas carrots celery soup mix and bay leaf. Cover and cook for 3-4 hours or until peas r soft and meat is tender..stir occasionally. 2. Remove bay leaves and discard. Remove ham shank allow to cool then remove meat from bone. Discard bone rind and visible fat 3. Chop 2 cups meat and return to soup. reserve remaining meat for sandwich filling or other use.
