The author, Greg Critser, blames high-fructose corn syrup (HFCS) as being a primary factor in the increase of the percentage of overweight Americans (and, really, people all over the world). HFCS is in practically all processed food, including foods served in restaurants, especially fast-food places. Apparently there is some difference in the way the body metabolizes HFCS, vs. other sugars, that makes it much more likely to increase fat deposition -- I was reading that section last night as I was falling asleep, so I'll have to re-read it to fully understand.
