celery root

I just ordered celery root at the commissary here at Monthan...but

the only way I can get it is if I get the whole case... does anyone know

if it can be frozen or how long it will stay fresh? or is someone near

here wanting some???? there are 20 or so " bunches " in the case...for

11.00 which doesn't sound too bad... but what the heck will I do with it

all??????? Can I mail it in Priority mail??? HELP!!!!

Celery Root will keep 3-4 weeks in refrigerator, so when you find them, buy

extras.

It freezes well. Wash, peel and cut into discs

or cubes. Water blanch for four minutes, plunge into ice

water, drain, pack in freezer bags, label and freeze.

ok what's it Look like? the roots of celery? or bok choy? or what? And is celeriac and celery root the same thing?

Yes, you have to peel it. I peel and cut it as french fries. They are

delicious! Only a little bit sweeter than potatoes.

I'd do what JJ said... I may even go ahead and cook it up and mash it then

freeze it... or cut into cubes... One thing, I don't know if you've had it

before, it's very good but also VERY rich... I can't eat nearly as much of

it as I could mashed potatoes!
