" Isomalt is a mixture of two disaccharide alcohols—gluco mannitol and gluco sorbitol. " This means that all of the flavors would be illegal because isomalt is made of disaccharides. Often natural flavors might contain wheat, starch, or corn. Or perhaps concentrated fruit juice (which is generally illegal and has been discussed a lot. Guest guest Posted March 4, 2004 Report Share Posted March 4, 2004 Hi Kate, Whoops, sorry, yes I used butter. I forgot that so many list members don't use it. My apologies! I wonder if you could use ghee? I made them by pouring the hot, hot syrup into mini-muffin tins, and then when they had cooled enough to handle, I scooped them out (they were still flexible) and wrapped them around the stick and squished them into a " moon " shape.
