Guest guest Posted February 24, 2004 Report Share Posted February 24, 2004 I made a most delicious birthday cake. It was a two layered cake using Jody's flat bread recipe. I doubled the recipe and anywhere it said to use peanut butter I used Almond butter. Then I cooked my own jam (razzberry) and used it as a filling. I bought some frozen fruits and just cooked it down with honey to jam. Then for the frosting I used the frosting in the Breaking the Vicious cycle with the honey, egg whites and vanilla-Honey Frosting page 110 into a marshmellow like frosting and topped it off with sliced strawberries. The kids raved about it. I even took a picture of it because it looked so pretty! Someone commented I should go into the cake baking business. I laughed so hard I nearly fell because until BTVC I was NOT a cook. Everything was microwaved and well preserved. Also for the snack with the almond butter stuffed in halved dates I just went and grinded up the almond butter with the dates. That way it is not as sweet. It was very delicious.
