I made a most delicious birthday cake.

It was a two layered cake using Jody's flat bread recipe. I doubled the recipe

and anywhere it said to use peanut butter I used Almond butter.

Then I cooked my own jam (razzberry) and used it as a filling. I bought some

frozen fruits and just cooked it down with honey to jam. Then for the frosting I

used the frosting in the Breaking the Vicious cycle with the honey, egg whites

and vanilla-Honey Frosting page 110 into a marshmellow like frosting and topped

it off with sliced strawberries. The kids raved about it. I even took a picture

of it because it looked so pretty! Someone commented I should go into the cake

baking business. I laughed so hard I nearly fell because until BTVC I was NOT a

cook. Everything was microwaved and well preserved.

Also for the snack with the almond butter stuffed in halved dates I just went

and grinded up the almond butter with the dates. That way it is not as sweet. It

was very delicious.

I also made the marshmellow. The kids liked it too.

I'll put them on pecanbread.com with the directions for making

the cake.

It sounds very unique.

I would have never thought to put jam on it (I hate jam...LOL).

But I bet my kids would love it.

If you get an extra copy of the cake pictures when you get them

developped you could just snail mail them to me and I can scan

them and then put them on the website.

I will send you my address privately.
