Guest guest Posted February 24, 2004 Report Share Posted February 24, 2004 I do the same thing - I use about a tablespoon of batter for each pancake; they come out maybe 2 inches across. Adam eats " sneaky pancakes " with a tiny bit of honey or peanut butter (2 pancakes sandwiched together with the sticky filling) for snack at school most days. I never thought to call them cookies; he is happy with the term pancakes. Same here as at Brandee's - as long as there is cinnamon (I think it is as much of a color thing as taste to Adam), he is happy. Note that these are not at all crispy like a cookie, and can be very limp (winter squash is the 'firmest' filler I've found). The cookies we make taste good and kids will eat them but they are very cakey and I'd love something to come out crunchy.
