I do the same thing - I use about a tablespoon of batter for each

pancake; they come out maybe 2 inches across. Adam eats " sneaky

pancakes " with a tiny bit of honey or peanut butter (2 pancakes

sandwiched together with the sticky filling) for snack at school

most days. I never thought to call them cookies; he is happy with

the term pancakes.

Same here as at Brandee's - as long as there is cinnamon (I think it

is as much of a color thing as taste to Adam), he is happy.

Note that these are not at all crispy like a cookie, and can be very

limp (winter squash is the 'firmest' filler I've found). An older

child might not accept the " cookie " label (but might still be happy

to eat them!)

I just wanted to mention that I have been making muffin-tops( using a

muffin-top pan) that are pretty crunchy. I dry them out a bit. I call them

cookies

and my son loves them. It is easy to hide veggies in them.

A muffintop pan looks like a cupcake pan but not as deep- just about 1 " deep.

If you do a search on muffintop pan you will find some. Mine has a non-stick

finish on it. I love it.

I've never heard of such a pan, but I'd love to try this. The cookies we make

taste good and kids will eat them but they are very cakey and I'd love something

to come out crunchy. Where do you find such a pan, what is it like?
