My husband used to react within 1 to 1 1/2 hours of eating gluten. He also had lots of canker sores inside his mouth pre diagnosis. Since being GF, he hardly ever has a sore in his mouth -- just cold sores on the lip once in awhile.

It's normal for me! Before going GF I rarely got home from dinner out

without running into a gas station or McD's for the potty... sometimes

I didn't even make it out to the car! I was practically housebound for

several years because I couldn't be more than 30 seconds from a

bathroom! I think the stress makes it worse, but after you've

humiliated yourself a few times it's impossible NOT to stress!

I've had canker sores for year. Since I've gone gf, I always notice that I get them the day after an accidental glutening.

The responses people have to gluten vary and with time may change. In

the beginning, small amounts may cause great trouble.... with some as

the gut heals and the antibody levels go down, there is not as big a

reaction.

I would start out with a clean plate, so to speak, and focus on eating

whole natural foods. Eat plenty of fruits and vegetables, chicken, fish

and lean meats. You can have potatoes and rice and corn. The diet is

only difficult if you are used to foods that come in a can, box, or

from a restaurant... If you can learn to cook for yourself and take

homemade salads and soups to work for lunch along with fruits and

veggies for snacks, you'll do great!
