My child has been invited to a birthday party for another child. Both are on the autistic spectrum and on special diets. I offered to make the cake for the birthday child. The other mom and our family are starting our children on the SCD diet and want the cake to comply with the SCD requirements. I just recently found out about the SCD diet. We are doing GFCF and Feingold. Our child definitely reacts to salicylates, which are prohibited on the Feingold diet, such as apples, oranges, peaches, apricot, bananas, grapes, cherries, and others. The difficulty I am having with the SCD diet is that I can't even use amaranth flour. I spent WEEKS trying to find a flour that I could use to bake some snacks and a birthday cake or at least birhday cupcakes, and now I found out that the SCD diet doesn't allow amaranth, even though it does not contain gluten. How am I going to make a birthday cake without even a gluten-free flour or a sweetener?! I need help. The poor little thing is all excited about the birthday party and asking about the cake. The peanut butter cake could probably be made with just about any nut butter. So if pecans are okay you could use pecan butter. If you can't use honey you might be able to sweeten it with pearsauce. Ditto for the icing. Who says it has to be " frosting " . You could put pearsauce or whatever your children can tolerate on top and decorate it with colorful candles, plastic cars or other decorations to make it festive. Bright colorful party plates. Buy unsweetened, unsulphered shredded coconut and freeze it. Once frozen, use a clean coffee grinder to grind the shreds into a fine powder. Use this instead of nut flour in some of the SCD recipes. Guest guest Posted February 23, 2004 Report Share Posted February 23, 2004 Coconut flour is very fibrous and is not recommended early in the diet. After nut flour is well tolerated, you could try adding coconut flour and see how it is tolerated. It's not illegal, just not all that easy to digest.
