She has celiac and is just starting the diet too. We are just going to have to start the cheeses and nut flours early. We don't have chronic D although Sam has always been really easily constipated, which is part of the reason we started this diet. He hasn't had a BM since we started, but I am not too worried about it since the changes. I am not going to add the raw fruits and veggies though because of this. I brought him in with all that I had on hand and he is staying for lunch. He likes the cheese " cracker " she made and the coconut cookies. Thanks for this list. He has sensory issues so mushy things are not his style. He tends to not like ground meat unless it's a burger, but I will try the croquettes. I am having a hard time with the egg-based omlettes so I will stick to the nut butter ones. He did not like the squash chips. I'm going to the grocery store today and hope to make my first batch of HM yogurt tonight! Thanks for the ideas! It really helps to have someplace to come to and talk about this! Guest guest
" We are just going to have to start the cheeses and nut flours early. " Chrystee, I can't remember if he was casein free before SCD. If he was, please start with goat products. Also, see if you can stick with making things that use nut butter instead of nut flours for a while. It seems the nut butter items are easier to digest. It's really cool that his teacher is starting the SCD too. That will really help with compliance to the diet at school since his teacher will know the diet well. Guest guest
Sam has not been diagnosed with anything yet. He is falling through the cracks a bit at this point. The school district says that he is not severe enough to get past their screening, so we are getting an independent evaluation. He obviously has sensory issues which affect his behavior and we think he may have a language processing delay. The last two years have been very difficult trying to figure this kid out. I know that I am going to have to fight with our district about this and getting something down on paper will help us alot. He is not casein free so I am not worried about the cheese too much. He is very easily constipated though, but since starting the diet he has only had one very loose BM. He will not eat hamburgers and chicken every meal of every day and does not like eggs. Adding the yogurt and cheese in really gets the pressure off him. He get anxious very easily and all this diet stuff plus his difficulties at school really get him down. I am going to stick with the nut butter for another week at least. I will try some pecan flour muffins next week hopefully. We are on a seriously tight budget and trying to afford all these nuts and figure out how I will afford all these evals is stressing me out! I really like the unsweetened PB. DH made banana pancakes yesterday and they were really good with PB on them. I'd like to be able to make cake and ice cream for an upcoming Bday party though. thanks for all the support! Guest guest
" I'd like to be able to make cake and ice cream for an upcoming Bday party though. " That shouldn't be any problem at all. If he is tolerating nut butters, make the peanut butter cake. It is super yummy! There are also recipes for several different varieties of " ice cream " .
