I use egg whites all the time now. Especially on mornings where I feel

really hungry a half cup of egg whites along with a piece of toast and

yogurt really fills me up. I also make really nice omellates out of egg

whites. I really enjoy the taste, and I don't miss regular eggs. I do

eat regular eggs when visiting family ect but usually have one egg

instead of the usual two. I find egg beaters has an odd taste so I

prefer to use just the whites.

I buy egg whites in cartons. 1/2 cup = 1 point

You lucky buggers. And egg for us is 2 points! But with around 75-

80 calories and 5-6 grams of fat per egg that does seem to make sense.

Er, my Food Companion has one egg as 2 points. Three egg whites are 1 point

total.

80 calories and 5-6 grams of fat per egg that does seem to make sense.

Sorry!!! :D

By the way, I have found the " trick " that works for on eating scrambled egg

whites.. I add three drops of yellow food coloring! I swear that then they

look as if the yolk was still there. One time, though, I decided to add

some red too. Hmmm.. they turned out peach colored. While they still tasted

just fine, peach eggs are not very appealing.

Tastes eggsactly (exactly) the same! I would never know if someone else had

made them for me. I use three egg whites, three drops of yellow and some

skim milk. Maybe 1/4 to 1/2 cup of the milk.

Here's another egg idea, too. You can have two egg whites for 0

-- yep 0 -- points. Beat two whites with one egg (2 points) for a

much larger scramble/omelette for only 2 points.

Here is my very favorite higher protein breakfast. I eat this for

breakfast after I lift. I call it " three pepper frittata " :

1 egg and 2 whites, beaten (OR sub 1/2 cup egg beaters)

1/2 cup frozen triple pepper mix (also called " Pepper stir fry. " It

has green peppers, red peppers, yellow peppers and onions in

it)

1/2 ounce light sharp cheddar, grated

Lightly spray a medium saute pan with olive oil spray. Stir fry the

frozen pepper mix over high heat until hot. Spread evenly over

bottom of pan. Turn heat to med-low and pour beaten egg

mixture into pan. Let sit until eggs set, but are still wet on top.

Meanwhile, turn on the broiler.

Sprinkle cheese evenly over top of eggs. Put saute pan under

broiler and watch closely...as soon as eggs are set, it's done!

Put on a plate and enjoy your 3-pt breakfast. Or add some light

whole grain toast (2 sl for 1 pt) or a serving of kashi with 1/2 c

skim (2 pts total) for a very filling, stick-with-you-until-lunch

breakfast.

What do you do with the yolks? Just throw them out? I feel like it

is such a waste and can't bring myself to do it.

My children love hard boiled eggs but only eat the whites and always

leave the yolks. Guess who eats their yolks?

You can freeze the yolks for a later use. I'm not sure for how long though. It

does seem wasteful, but just think this little ditty that helps me.... " I can

waste this or I can waist this " makes it easier to toss then!

freeze well. However, I never used as many as I froze.

I'm the queen of frugality, so I hated the thought of wasting them,

too. But I finally " got over " my fear of wasting them. That fear of

wasting stuff is one of the reasons I was fat to begin with!

When I buy eggs on sale, it still works out to be cheaper to waste

the yolks and use only the whites than if I were to buy egg

beaters all the time.

So I waste 'em. In the long run, poor health would be more costly

to me than the money I threw away in egg yolks. :)

Throw them away.

It used to bug me to " waste " them. But then I realized that was

one of the reasons I was fat.

My health is more important that the yolks. :)

I feed mine to the dogs. It's good for their coats and they LOVE them.

Isn't that freeing, Lynne? I tell you, once I started just THROWING AWAY

leftovers I began to feel like I really had control over my life!

During my recent recovery a lot of people brought us food. We always ate

some, but often it was way more fatty than we wanted to eat. If it

wasn't absolutely, " throw me on the floor and let me roll around in it

naked " delicious, we learned to just toss it. (I hope that doesn't sound

horrible, but I just don't eat grocery store fried chicken for anyone. I

appreciate the thought, but ugh.)

Do you have a recipe? No, I don't want to eat it, but I do make cheesecakes for

a couple different charity auctions where I've committed to a cheesecake a month

for a year for three different people....so I'm always looking for recipes to

try. And, something that is " throw me on

the floor and let me roll around in it naked " has the highest endorsement I can

think of!!
