My daughter is in kindergarten, but is at daycare for about 3 hours each morning and eats lunch there. I don't think she is ready for nut flour yet, so I have been holding off. Her lunchbox typically contains: entree: chicken soup (partially de-brothed) or " meatballs " (meatloaf that I make with beef, pork and lots of veges hidden) with SCD ketchup. (in a thermos) an appropriately ripe banana or dish of apple sauce. small dish of yogurt dill pickle cut up small handful (4-5) of porkrinds dessert: serving of Dccc custard, serving of legal pumpkin pie filling, etc. I don't have to send snacks as she is not there that long. She is good about eating the same things every day (better than I am!!! :-) She doesn't always eat everything, but I want to make sure there is a lot of food in case she is hungry. A big help: Rubbermaid " take-alongs " ----they are like the little 1/2 cup size Tupperware containers, but no where near as expensive. I found them at Target. Lissy (autoimmune arthritis that is slowly improving on SCD, and has reacted to two (small) " cheats " hmmmmm......) Tessa (5 years, ASD, seizures, 100% SCD and making slow but definite progress) SCD since December 26, 2003 Daycares I have not yet started this diet for my 4 year old Autistic son, but his doctor would like me to try. We have not seen any change with him being on a GF diet. There is no doubt that has something going on with bacteria/yeast etc. I'm trying to read as much as possble before starting this I have to say it seems very overwhelming, hats off to all of you... Right now I copy the daycares menu, and adjust it for , so he is basically eating the same things just a gf version. What are my chances of incorporating this diet into his everyday daycare life? His director is also doing SCD for celiac so she makes him snacks like fruit rollups from pears, cheese crisps, and she has successfully used the soft cinammon raisin bread recipe substituting coconut flour for the nut flour. Meringues are good too As for lunch....Ugh! Sam used to live on cheese or tuna sandwiches so this is a tough one for us. Thankfully he is only there full day on Tues/Thurs so I only have to worry about two days. He's been sick so he hasn't been a full day yet since we started the diet either. I'm thinking we'll do lots of chunks of cooked chicken or steak, cooked carrots and green beans. When he can have raw things he will be happier because then he can have melon, pears, baby carrots, grapefruit...etc. We have no dairy issues so we started using the homemade yogurt earlier than most on this list. It is a staple in our house now!!! Good luck! Guest guest Posted February 16, 2004 Report Share Posted February 16, 2004 Welcome , My daughter goes to a nut free, fish free school also so it can be pretty tricky especially since her favourites are peanut butter and tuna fish. I recently started making the souffle bread so she can bring toasted sandwiches to school. So far she had chicken salad, cheese and jam sandwich and an egg salad sandwich. On days when there is no bread she just takes cooked vegetables and plain chicken (or egg) salad minus the toast. I have also cut up pork and made " pork salad. I send little tubs of applesauce, pearsauce, yoghurt, honey and bananas. You might be able to use the chicken pancake recipe as a kind of sandwich. If your son prefers you could always cut then rectangular or square.
