They're just egg white and honey. You could probably use less honey since the egg white doesnt taste like much. They take awhile because they dry out instead of bake, but they are crunchy! My guess is that you didn't beat the eggs whites until they were really stiff. It should remind you of shaving cream when it is stiff enough. Guest guest Posted February 16, 2004 Report Share Posted February 16, 2004 What happened?!?! I messed up one whole sheet when I made them! Parchment paper or a Silpat sheet is a neccesity. I dried one sheet on Silpat and they came out fine. I have not used parchment for so long since I got the Silpat so I tried wax paper.........ugh. They completely stuck and I could not get them off without reducing them to rubble. Next time I will either make half a batch or invest in some parchment paper!
