Guest guest Posted February 15, 2004 Report Share Posted February 15, 2004 Becky, I really feel for you, we've only lived here a year and a half and I don't really have any REAL friends here, because playgroups and such are hard for Luke and just hard in general with 3 little ones. Mom is actually my mother in law and she lives up in Va but she has just made it her personal mission to help with this as much as she can, and I'm beyond thankful. We ARE part of a church and I know people there, who if I was desperate, would surely offer their help in some way, maybe not COOK for me but at least give me an evening alone to do it. But I never ask... it's so hard to ask for help. I hope you can find some source of help or that at least things will become easier. I double almost every recipe I make, I don't know if there's some secret to it, I just double the amounts on everything. But I'm not the one to ask, I'm still new and NOT the best cook, by far! I wish my mom was nearby to help and as for friends, I don't get out very much so I haven't met many people. It's pretty lonely when you are housebound because of your autistic child (that's why I love these lists!) My husband left for a business trip this past Monday and the three younger kids got my oldest kid's cold, so I've been up several nights attending to a fussy toddler and an ear infection in one of the other boys. Maybe that's why all the cooking is getting to me. My husband is supposed to arrive tonight but there's supposed to be snow, so I don't even know if the airport will shut down, we shall see. Anyways, I was really pondering about doing the diet for the whole family and I'm not sure now since I'm having a hard time cooking for just two. Someone else asked if we can double recipes, for example, the peanut butter brownie recipe, can that be doubled? Got to go and get the brownies out of the oven. Guest guest Posted February 15, 2004 Report Share Posted February 15, 2004 Jody, Liam is eating more things, but some things I still have to feed him. He will eat bacon now and sometimes chicken. He loves the muffins, but didn't try the peanut butter cake. I stayed up late making it for their party, the teacher told me he put his fork in the mini cake and threw it right into the trash. At least Abigail loved it. He's eating broccoli, but will only eat cauliflower and meatloaf if I sit there and feed it to him. I've tried cheese will no reaction and they both like that, but I'm still trying to limit it some. They both like the waffles, eggs, pineapples, apples, bananas, and the apple gate farms turkey hot dogs. Abigail loves spaghetti squash, Liam tried it once and seemed to like it. I sent it to school and he didn't eat it, so I may have to feed him that one too. He does like pineapple smoothie and grape juice, Abigail doesn't really like those. I'm working on more veggies. They do like carrots and Abigail loves salad. I guess that's about all, I'm working on new recipes and Bill's more supportive now which is nice. Now, I just have to get him on the diet too. I'm not a cook by any stretch of the imagination so this is quite a challenge. Since yesterdays meat sauce success I was cooking that today. Then I made unsuccessful meringues and now I'm making cinnamon almond cookies. This is hard. You feel like your entire world is wrapped around this diet. I have no family or friends here so I'm doing it solo too. I wrote to commiserate but also to ask you how much pear sauce you put in the brownies. I need to give that a try too. I haven't taken my first batch of cookies out of the oven but I went from 1/3 cup of honey to l Tbl. and one banana. We'll see. Anyhow could you send me the pear sauce amount? Only thing is that you never want the dough to be too thick or it won't bake through properly...unless you use a bundt pan.
