Guest guest
What a great recipe source Pecanbread.com is! I have a question about the peanut butter cake recipe (with photo). The instructions give an oven temp, but not the size of the pan used. In the photo the cake looks round. Any recommendations on pan size and oven temperature? Kathy E. Guest guest
Kathy, I like making it in a two piece angelfood cake pan. It cooks very evenly that way. And it's easy to get out of the pan. Jody mom to -5 and -7 SCD 1 year

Guest guest
Hi Kathy, I made the (pumpkin face) peanut butter cake in two 8 inch round pans. Since my oven is possessed, I can only guestimate that the oven was at 300°F for about 20 mins. I don't like to put too much dough in a pan, I prefer it bakes all the way through which is sometimes difficult with nut flour (butter) baked goods. So I will only half fill the pan or only fill it one third up the side. If I want a taller cake I'll just make a three layer of four layer cake. That gives more to frost which my kids love. Also, I often throw a quarter of ripe banana or applesauce into the dough to make it moist. Some peeled deseeded zucchini would probably work also. If you find that the sides of your cake are getting too done (read " starting to burn " ) and the centre is not quite done a tinfoil dome over the top with an " X " in the centre peeled back, should help. Also lowering the oven by 25°F and baking longer also helps. Sheila, SCD 36 mos, UC 20 yrs, kids on diet 21 mos I have a question about the peanut butter cake recipe (with photo). I have made it 3 ways: 2 8 inch layers (cook for a bit less than 20 minutes each at whatever temp the recipe says, I can't remember right now). Start checking at 15 min, but I'm guessing I did 17-18. 1 8 inch layer - cook for 20 minutes (always check with a toothpick) again whatever temp the recipe says. cupcakes. We made very large cupcakes (only got 7 or 8 from teh whole recipe). I don't know how long we cooked them, just kept checking them. They puffed up great! -- Sue, mom to Adam and SCD 4 months
