I am on a Candida plan and it says NO KEFIR ALLOWED because of casein and galactose. I have found a lot of info suggesting that these are negligible concerns and many have had great luck using it to fight Candida and raise immunity. I think I may have posted awhile back to see if anyone had any experience with this; so I am sorry it this may be redundant. Any thoughts on this issue? Cheers! Basically, if you ferment it an extra 24 hours at room temp after straining or several days in the refrigerator, the sugar content is negligible. I have no idea why they would eliminate casein as it's a protein, not a sugar. I would think casein would only cause problems if you are allergic. I have brought my candidiasis under pretty good control through the daily use of milk kefir, water kefir, kombucha and fermented veggies.
