Fw: recipe, diabetic

Hi all, I got this wonderful-souneding recipe today from the Ameridan Diabetes

Association website, where I went to look up a couple of things. I looked at

the end where it tells the carbs, sugar, etc. A diabetes official site saying

this is okay? It sounds awfully high to me, 20 grams of sugar and I think 21 or

23 in carbs, for one serving? I really got annoyed with this because I think we

like to depend on these kinds of recipes from diabetic sites being right.

Whether we eat too much of them of ourse is our business. But those are my

thoughts on this, am I wrong?

Applesauce Nut Bread

Recipe for Tuesday, 05/16/2006

Perfect for breakfast or with an afternoon cup of tea, this quick bread is a

snap to make. The applesauce helps keep the bread moist and the cinnamon,

cloves,

and raisins enhance its natural sweetness and great apple flavor.

1. Preheat the oven to 350 degrees F. Prepare a 9x5-inch loaf pan with nonstick

pan spray.

2. In a large bowl, combine the egg, applesauce, oil, sugar, raisins, and

walnuts; mix well.

3. Sift the flour, baking powder, salt, cinnamon, and cloves in a medium bowl

and add to the applesauce mixture; mix well.

4. Pour the batter into the prepared pan. Bake for 1 hour. Cool 10 minutes on a

wire rack before removing from the pan. When cool, cut into 18 slices.

meal plans are about as varied as the number of individuals on them. For

an active person who is taking as many as four carb choices (60 grams)

per meal, that wouldn't be too bad. For someone like Harry who is trying

to stay under 30 grams carbs, that dessert would necessitate either

cutting something out or foregoing the dessert.

In other words, it's up to the individual how to spend his/her carbs;

one hopes he/she does it wisely.

I personally stay away from such desserts as they have more carbs than I

want and I'd rather spend them on potatoes or dressing or tortillas or

.... You get the idea. But that's a matter of choice.

If you read at the bottom of the rcipes -- at least when they appear as

the " recipe of the day " -- you will note that it specifically says that

not all recipes are right for all meal plans.
