My daughter is tube-fed, so that part is easier for me, but I know some of you are good at creating/playing with recipes so I'll just throw it out there as a possibility. Taco Tartlets 1 lb. ground beef 2 T taco seasoning mix 2 T ice water Filling: 1 c. sour cream 2 t. taco sauce 2 oz. black olives chopped 1 c crushed corn chips, divided 1/2 c. shredded cheddar Combine first three ingredients well and press it into bottom and sides of tiny muffin pans (makes aboug 32 if you use about 1/2 an ounce of meat each. Combine sour cream, taco sauce, olives and 3/4 cup of tortilla chips. Spoon into each meat shell. Combine rest of chips and cheese and sprinkle over each tartlet. Bake 375 for 10 minutes. I guess you would have to omit the chips and you'd have to check the seasoning and sauce depending on your carbo allowance. And maybe this wouldn't be so precise for some of our kids. But I thought it could maybe be one of those things that could be made ahead and frozen for those pizza days at school or whatever.
