Not only does it stay mixed better when refridgerated but if you dont

refridgerate it you end up with lots of bacteria in the peanut butter -

always refridgerate it.

To keep it mixed I just give it a really really good stir when I first

open it - I usually put it all in a big bowl to stir then return to the

jar - and I stir it a bit each time I open it.

You've

got to have a big stirring session when you first open the jar.... then

refridgerate it. My aunt gave me another tip, though..... she stirs, then

lets the jar stand (screw the lid on TIGHT) on the counter upside down

for a couple of hours, then refridgerates. Any separation would go toward

the bottom of the jar. Another thing you can do is stir it really thoroughly

the first time.... then transfer some of it to another container. Then

remember to fridge all of it..... stays mixed better. It's also easier

to stir when you don't have peanut butter right up to the brim......

I always try to stir it a little bit each time I use it and hope for the

best. Try to remind yourself that NOTHING has the same exact values every

time you use it.... you're just getting as close as you can.

peanut butter

question -- oil on top

In an effort to be a little healthier with the diet, I

bought some natural peanut butter (as opposed to the

Simply Jif with hydrogenated oils). This is the kind

that has the oil on top that you stir in. The figures

on it are about exactly the same as the Simply Jif.

Anyway, my question is -- it's very difficult to get

the oil stirred in uniformly when you first open the

jar. I'm worried that by not getting it all smooth

and creamy -- like the Jif -- that my values are going

to be off (i.e. that there will be more or less fat

distributed throughout the jar). Any thoughts? I

just made peanut butter cookies -- but I'm a bit

afraid that the ratio will be off. Thanks!--D
