I assune that certain greens will have high phytate or oxalate content (like perhaps spinach) but are all greens so high in phytates or oxalte content? If I want to juice in order to get a a concentrated form of vitamins and minerals am a really getting the benefit if there are phytates and oxalaes in the greens? Are phytates in leaves as well as in the seed (wheat grass versus the kernal for example)? Is it better to just ferment grass as I would do with cabbage to get sauerkraut?
