Guest guest Posted December 15, 2007 Report Share Posted December 15, 2007 I've been playing around with a recipe for a decent NT type cake and I am VERY pleased with the results! Thought I'd pass it along in case anyone else wants to try it, it is YUMMY! *Creamy Coconut Banana Cake *Combine well, 1/2 c. melted butter 1 c. yogurt 2 1/2 c. whole wheat flour Cover and let sit at room temp overnight. Then beat together, *3 very ripe bananas, mashed* *1 c. honey* *2 eggs* *1 tsp vanilla* *1/2 tsp salt* Beat into flour mixture until smooth. Then beat in, *2 tsp baking powder* *1 tsp baking soda* Beat well and quickly pour into a buttered 9x13 cake pan. Bake in a preheated 350F oven for 40 minutes. While cooling blend together in a saucepan, *1 can whole coconut milk* *1 egg 1/3 c. sucanat* *1 tsp vanilla* *1/4 c. arrowroot powder* Cook whisking constantly until quite thick. Remove from heat and let cool stirring occasionally. When cool beat in, *1/3 c. unsweetened coconut* Spread over cooled cake and sprinkle with additional coconut. -- *~ Siemens~* Mama to 3 wonderful blessings, Married to 1 wonderful man!
