I recently bought some grass fed cheese from NZ at Trader Joes and i must

tell you it was the best cheese I have ever tasted, bar NONE. I never

heard of spring grass, is that different?

apparently yes. according to westin price (and a bunch of other folks), the cows

produce a much richer milk with higher fat content when they graze on the fast

growing green grasses (typical of spring). the milk is also higher in omega 3

and carotenes and other stuff that I'm only just beginning to get a grasp of

(sure was simpler in the old days when ya got a bunch 'o milk from your cow in

the spring and not so much in the winter eh?).

On the scale of things NZ cheese is pretty darn good. Im a born and raised

kiwi.;-) But I have to say the cheese here in France, which is mostly grassfed

and raw is wonderful too.

All milk is grass fed in NZ, feedlot situations are pretty non-existant. The

reason why 'spring grass fed' is better than just 'grass fed' is because in the

spring the grass grows very rapidly and has a higher vitamin content than at any

other time of the year. This translates into a higher vit content milk, which I

would also assume goes for raw cheese made from that milk. Price discovered the

X-factor which was present in dairy fed by rapidly growing spring grass. Its

powerful stuff!

Yes, but it makes the most sense to get a sense of how healthy the

grass is and what its brix is. I know some people brix milk but it

would make far more sense to brix the grass the cows are eating. But

yeah, the more green, the more growth, the more health, the better

milk. And better milk = better cheese.

Spring grass is grass that grows in the spring. The season itself is

not so much important -- the important thing is that the grass is at

its peak of growth and photosynthesizing the most actively. This

makes for the highest vitamin content.

Do you know where to get such a brix meter and what to call it? I know

there are brix meters for wine/beer makers but I'm not interested in

sugar content.

brix meters measure the solids in liquids, yes? Often used for measuring sugar

in soda fountains, but that doesnt preclude measuring other products as well

:-))

Does every brix meter do that or do you have to buy different meters

for TDS and another for sugar?

Also, do you know where to purchase one?

You can get an electric TDS meter if you want, but for measuring

plant/fruit sap/juice quality, a regular Brix meter works fine. I

got mine for about $40 on ebay, although I hear you can get them for

as little as $20 on ebay.

Is there literature (paper or web) on what amount of what is best for

each plant?
