If you did not want mashed potatoes, there are several recipes in the diabetes list archives for using cauliflower similar to mashed potatoes. Green beans or a salad would be good. This is just a quick thought. If you need the recipe for the cauliflower and cannot find it, let me know and I'll see if I can find it for you. Guest guest Posted January 3, 2003 Report Share Posted January 3, 2003 A really scrumptious and easy and impressive and healthy meal: starter: mini tricicolore salad: sliced tomato, a slice of frsh italian mozarella, and a slice of avocado with apiece of fresh basil and a teaspoon of olive oil main course: mixed salad and pasta dish. pasta dish: make sauce first, depending on what you like howevr my favourite is frsh mushroom and garlic: dessert: fresh fruit salad then mixxed cheeses and crackers then fresh coffee, maybe decaff.... fry mushrooms and some onions lightly in olive oil with chopped fresh garlic then simmer in tomato pauree watered down a bit, until sauce thickens...about 20 mins...depend on how much puree and water u use... then when you serve starter put big bot of water on to boil, quick trick...use hot water from tap and lid on! then add pasta when boiling just before ready to serve, use fresh pasta as only takes 3 mins to cooks. Drain and serve with sauce garnish with fresh basil leaves and fresh parmesan (optional) for salad: mixed green leaves, cucumber and a grated carrot to add colour dessert:mixed fresh fruit salad, toss in fresh lemon juice to stop browning....can serve with ice cream if u wish... to then really impress serve cheese and crackers after that...a few nice cheeses and crackers... fresh coffee, decaff good option, not instant...
