Would you just add with the butter or with the chicken stock and would you use beef stock if making beef stroganoff or pork chops in mushroom soup? Cream of Chicken Soup Substitute 3 T butter 3 T flour 1/2 cup chicken broth 1/2 cup milk salt and pepper to taste Melt butter in a saucepan over medium-low heat. Remove from heat and stir in flour; keep stirring until smooth. Add the chicken broth and milk, a little at a time, stirring to keep smooth. Return to heat. Cook, stirring constantly, until it thickens. Taste and add salt and pepper, as needed to taste. Use in casseroles in place of condensed cream soups.
