Hi All,

I have spacers in my teeth in preparation for getting braces on my

teeth(yes, braces at 30) in a couple of days. I am not able to eat

anything the least bit hard or chewy and probably won't be able to

for the better part of a week. Does anyone have any ideas for Phase

1 food? I have been living on very bland soup, ricotta, and yogurt

and am about to climb the wall, LOL! Thanks in advance,

-Katy

RE:

Well, I can

" chew " a boiled egg, but even shredded chicken is just too much

chewing. My poor mouth is just begging to seek solace in some mashed

potatoes! I have been eating yogurt, but it doesn't " feel " like

real food. Thanks for the ideas, I really appreciate them!

Oh..since

you said mashed potatoes..why not try *faux* potatoes? Made from steamed,

mashed cauliflower, it tastes a LOT like mashed potatoes but with a very low

carb count. Only make as much as you will eat in a day or so. Being that

cauliflower is a cruciferous vegetable, when it sits more than, oh, 6 hours or

so the flavor changes and it no longer tastes like mashed potatoes. *just my

personal experience on that one!* Instead of making a whole head of

cauliflower, do ¼ of a head to try the recipe or ½ a head.

Cauliflower

Mashed Potatoes

Cauliflower

mashed potatoes taste like mashed potatoes but without the carbs! Mashed

cauliflower is a bit more lumpy than potatoes but can still taste creamy with

the added butter and cream.

Ingredients

1 head

cauliflower

2 tablespoons

butter (or more to taste)

1/2 cup cream

Cut the

cauliflower head up into small chunks and steam until it is very very tender.

It should mash up when you poke it with a fork. Drain any water from the

cauliflower and pat dry with paper towels. In a large bowl, combine

cauliflower, butter and cream. Mash with hand masher or whip with electric

beater until it is the desired consistency. If it's too lumpy, try putting the

whole mixture in a food processor and processing until it's smooth and creamy! Season

to taste.

You have to

make sure to cook the cauliflower just right in order for this to come out like

whipped potatoes, otherwise it will be a bit lumpy, but still tasty!

Cauliflower

Mashed Potatoes has 6 Grams Carbs per 1 Cup Serving
