The recipe below is strange but good. I leave out the baking powder

and it's more like a brownie.

Bean Cake

1 15 oz. can black beans (drained & rinsed)

1 cup eggbeaters (or 4 eggs)

1 cup Splenda

3 Tbsp. baking cocoa

1 tsp. baking powder

2Tbsp oil

1 tea Vanilla.

mix all in blender - pour into 8x8 glass pan sprayed with Pam.

Bake at 350 degrees for 35-40 minutes.

I found it over on the prevention web site. here it is:

This is the very best bean cake in the world. I made it again last

night and we gobbled it up (with a little CoolWhip on top). I use my

food processor and whip the tar out of the mixture. It's light and

chocolaty.

BETT'S PEANUT BUTTER BEAN BROWNIE/CAKE

1 15 oz can black beans

2 eggs

1/4 cup water

3 Tablespoons of Canola Oil

2 teaspoons vanilla

1 heaping Tablespoon natural peanut butter

3 Tablespoons cocoa

1 1/2 cups Splenda (not packets)

1 teaspoon baking powder

1/4 cup chopped nuts

1/2 small package sugar free choc fudge pudding mix

With food processor blend all ingredients for about 4-5 minutes

until very smooth.

Pour into a pie plate that has been sprayed with Pam.

Bake at 350-degrees for 25-30 minutes.

NOTES: Do not use a mixer because beans will not be smooth enough.

They'll be lumpy! Yuk! I know this sounds like a lot of Splenda, but

it needed it. The loose Splenda is not as sweet as the packets.

By the way I think I killed my blender trying to make it :) Its in

the oven now, smells good.
