The recipe you posted had 3 no-no's....cream, sugar and cornstarch. When I make mine I add a little low fat cream cheese, salt and pepper. Some people also add low fat cheddar cheese. You can add some non fat milk as well and I put it all in a food processer or blender

I thought it was OK but the DW didn't like it. I tried it again,

adding some parmesan cheese and it was better. I've seen a cheese

recipe someplace that's pretty deluxe and I hear that's pretty good.

Ditto the cauliflower " fried rice " . Needs a bit of work to make it

OK. About the best you can say is that it resembles rice in texture.

One decided factor is the quality of the cauliflower. I've found

quite a difference. Fresher, younger, sweeter cauliflower might work

better.

This is what I do...and, I hate cauliflower but love this!

Cook (in microwave) fresh cauliflowerettes till over-done. Drain so

they aren't watery.

Place in food processor and mash. Add a touch of allowed margarine,

milk, salt and pepper. Process till smooth and creamy. Pour into a

casserole dish. Top with grated Cheddar cheese. Place in 350º oven

for about 10 min. till cheese melts. You could even add chopped

green onions or diced Canadian bacon to the topping.

If you are near an Asian grocery, buy some waterchestnut powder. It works exactly like cornstarch and is perfectly SB legal.

We love them, too, . I even served them for Thanksgiving dinner!! I use cream cheese in mine, as someone else mentioned.

It’s a personal preference thing. We *never* ate cauliflower before. We didn’t like it. We really like the mashed cauliflower though. (just the one from the book… no cheese added or anything).
