I tried to cook a wild goose Christmas Day, what a disaster that was, but everyone was quite jovial about the mishap....All the recipes I found were for farm raised geese.....well, apparently, I undercooked it when I cooked it for 3 hours, it should have been 6 and at a lower temperature and in a moist environment....covered. Well, after my dinner (I had a friend bring a ham also, just in case) I marinated it 5 days in wine, lemon and spices and recooked it in a covered pot for 3 hours in a slow oven (275 degrees). Well, that's the extend of my misadventure. I hope I was brief enough. For the new year, I am attempting to be more succinct, I do not want to clutter anyone's brain...especially not yours!
