Prior to purchasing the grain grinder, I made a variety of breads on a regular basis, but always with already ground (likely rancid) flour. What do I need to order from my food co-up to grind? Hard wheat, soft wheat, what? I always just bought whole wheat flour from store. Any recommendations? Suggestions for grinding other things and baking with alternative flours? I like spelt, too.
