I have a recipe for " Pig Pickin' Cake " .......YUM!!!! We have pig

pickin's in the south....I live on the coast of North

Carolina....what a treat these parties are!

Okay dear.......here goes......the cleaned pig is placed on a huge

hot grill and cooked slow all day long while basting with homemade

bbq sauce (made from vinegar, sugar and ground red peppers). When

it is ready you have all the " fixins " (slaw, hush puppys, baked

beans and sometimes brunswick stew) and you literally pick your meat

off of the cooked pig...hence the name. For dessert we have pig

pickin cake....:) or banana puddin'.

A big thing here on the coast of NC is to have a pig pickin and

oyster roast at the same time....oyster roast...you steam the

oysters...when they are done but still hot, you dump them out on a

table (outside) and stand around and open them and eat them.

What a treat! Wanta come?
