Cups: Melt ¼ stick butter. Cut enough fillo for 24 6”pieces. Pam or butter 4 compartments of a medium to large muffin pan. Lightly brush melted butter one sheet at a time rotating placement of the compartments to form a flower with 6 sheets each. Bake 3 min. or until lightly brown. Can make ahead up to 24 hrs. in advance. Filling: In sauce pan, mix fruit with juice, ¼ c. brown sugar, cream and vanilla. Heat on med. stirring until all ingredients form a heavy syrup. Canned fruit will take considerably less time than fresh fruit. Crumb Topping: Melt remaining stick of butter and add graham cracker crumbs and remaining brown sugar. Mix with fork to break up large pieces. Crumbs should be wet. Assembly: Remove shells from muffin pan. Add a heaping teaspoon of crumbs in bottom of each shell, pack lightly. Fill each shell with ¼ of peach mixture and top with remaining crumbs. Place on cooking sheet and bake at 300 degrees for 3 min. or until golden brown. Presentation: Place in the center of the plate, top with petite scoop of ice cream and choice of syrup and or powdered sugar.
