The Atkin's program states to avoid nitrates as they are a

carcinogen. I've never worried about nitrates in my bacon as

previously I rarely ate bacon. Since on the Atkin's program though,

I'm eating bacon several times a week. I looked at all the packages

of bacon in my local grocery store and they all were cured with

nitrate. Anyone know some brands that are nitrate-free? Also, where

do they sell nitrate-free bacon? Roxanne

I've never heard of Wellspring, so I doubt we have it around here. I

got the Atkin's stuff at the health food area in Fred Meyer's, so

I'll have to look there and try some of the other health food stores

around here. Roxanne
